It was Scout Sunday at St. Andrew’s Lutheran Church today.

While both of our Scouts participated, I was struck by something that Laura said. On behalf of the church, Pastor David presented her with the Eagle Scout board for the newly-formed Troop 523.

This is a big deal because Troop 706, which is John’s Troop and the affiliated boy troop, has a rich history of 150+ Eagle Scouts. When Laura realized that the board was for Troop 523, she was so very excited. After the services were over, she said to me, “I WILL be one of the first names added to that board.” I know she has a goal of Eagle, but her voice this morning was pure determination. It made me proud. Bust down those walls, Red. Let everyone know that you can do anything you put your mind to. I cannot wait to plan your Eagle Court of Honor.

Valentine’s Day decorations are up!

It is “Freezer February” at the Kassel Castle! It is my goal to put 10 meals in the freezer by the end of February. Up first was Chicken Spaghetti, Chicken Parmesan Casserole, and Crockpot Tomato Soup.

On the menu for this weekend is Baked Penne Pasta and Beef Ravioli. I also want to get some English Muffin Pizzas made and frozen for the kids, prep different types of chicken parts in various marinades for easy grilling, and freeze Breakfast Burritos and different types of Breakfast Sandwiches. I am so thankful for the big freezer. It is going to be a busy kitchen month!

Nothing quite says “Snow Day” like the kids arguing while shoveling the sidewalks and driveway.
