Since the kids are away at school, I have been experimenting with making smaller versions of some of the recipes that we love. This is Hashbrown Casserole. I divided this recipe into thirds, and it worked well! There are just enough leftovers for lunch tomorrow, and now, I know that I can make the normal size recipe and freeze two of the portions. It is time to order more of these aluminum pans!
